Honestly, this is not how I pictured my 2020 Spring series of cooking classes kicking off, but after several weeks of planning I have high hopes for my new online series of classes.

When people attend one of the hands-on cooking classes at my home, the visit generally includes a look in my “cookware closet.” Its all pegboard floor to ceiling, a la Julia Child, with two small shelves for stock pots and bakeware at the bottom and a tall rack of pot lids on the door. Students often take photos, but I never expected that one of those photos would turn into this fabulous oil painting by Charlotte Impressionist oil painter, Mary Kramerer.
As we aren’t in my kitchen looking at my cookware closet right now, I thought this interpretive visit would be a nice start to my 2020 listing of upcoming online cooking classes.

You can pop a check in the mail if you would like or easier still, why not “Venmo Me!” (Words I thought I might not ever say, but now I love it!) or call me with your credit card info. I’ll go over all the choices when you make your advance reservation.
Then, I’ll send you everything you need.
These group cooking classes are not intended to be a a cook along sort of experience. I’m reserving that opportunity for private individual or group virtual cooking class experiences.

Recipes, Food & Drink

We will include wine pairings ( and maybe a recipe for a cocktail made with local spirits) with each and every class.
And, in the case of nearly all of the On the Farm classes, farmers will have “Heidi Sent Me Grocery Pick Up” available for sale and pick up at the farm or a Saturday farmers market, if applicable.

I’ll give you a list of all the local resources, as I do in every class, so you can Shop Local and easily get everything you need for each of the recipes.
We are all in this together. Cooking and sharing, albeit digitally, is a great way to relieve the stress and the tension; and have some fun around our virtual table.

These cooking classes will all be on Zoom in an interactive format. All participants will receive recipes and a shopping guide with local resources as soon as registration is confirmed with advance payment. The morning of class, each paid class participant will receive an email with the online access code. Just click on the link about 5 minutes before class time and I will virtually welcome you into my kitchen.
COOKING WITH MUSHROOMS

Wednesday April 22, 2020 – 6-7:30 pm. Join Heidi for this first virtual At Home with Heidi class featuring 3 mushroom-centric dishes all made with locally raised mushrooms from Charlotte’s own Urban Gourmet Farms. Cooking with Fresh Herbs – On the Farm with Windcrest Farms
Thursday, April 23, 3-4:30 pm. For this fun On the Farm Class, Mary Roberts from Windcrest Organic Farms in Monroe NC, joins us! Mary will share all there is to know about planting your Spring Herb garden.
Our focus will be on cooking with sage, thyme, rosemary, oregano, tarragon, mint and lavender. All of these are in the family of Mediterranean Herbs and all perfect to plant right now. Once we know how to plant and grow our own, I’ll share 3-4 recipes you are going to love.

I know what you are going to ask, but its still too early for basil. We’re going to wait and give it a class all its own in May when we can pair it with locally grown maters – stay tuned. Cost for the live class experience is $25; for the replay $16

Where’s The Beef – On the Farm at Proffitt Cattle Company

Saturday, April 25, 3-4:30 pm. Excited to be back in the kitchen with local rancher Shelley Eagan in on this virtual class coming at us live from Proffitt Family Farm in Kings Mountain, NC.
We’ll use Proffitt’s organically raised beef in three (maybe four) easy to prepare recipes your family will simply adore. Between recipes, Shelley will show us around the farm and talk about all that goes into raising cattle for delicious grass fed beef,
You’ll also be treated to a special quarantine episode of “Is It Delicious?” with Bonnie the farm dog! ( if you don’t know what I am talking about – check out Shelley’s Instagram feed at @proffitt_family_cattle_co and enjoy!) Cost for the live class experience is $25; For the replay $16

Its the Cheesiest with Zack Gadberry of Uno Alla Volta Cheese
Tuesday April 28, 4-5:30 pm. Gotta love all that Zack Gadberry, cheese maker and monger at Uno Alla Volta cheeses has done with his local business.

I use regularly use UAV cheeses or butter . I consider each product, from the rich Mozzarella and ricotta, to cottage cheese and a yogurt style cheese, to be a must have on your weekly shopping list. Excited to have Zack join us for this class to share how its done while I cook with each of his products. Count on at least a trio of cheesy recipes. Plus, as a bonus Zack’s wife Victory is going to join in the fun with info on wine pairings for each course.

On the Farm at New Town Farms with Sammy Koenigsberg

Wednesday April 29, 4-5:30 pm – The very first On the Farm class I ever did was maybe 6-8 years ago now at New Town Farms with Sammy and Melinda. This salute to Springtime class has been a tradition ever since and while this year the format is a bit different, we can’t let a little pandemic stop this long standing tradition.
New Town Farms is a small family run farm focusing on the art and craft of sustainably growing vegetables in their five acre garden; and raising pastured poultry, pastured laying hens, and Heritage breed, free range hogs. Come and join us as we cook with an assortment of fresh from the farm veggies, chicken and pork.

Thursday April 30, 6-7:30 pm. If you’ve been following my Instagram feed or either one of my Facebook Pages here and here , you know I’ve been cooking a lot with seafood from my friends at Inland.
