Spring 2018 Update: Cooking Classes You’re Going to LOVE!

Its official – we are cooking up a storm. Here is an update of my ongoing 2018 Cooking Class Schedule with  two fabulous On the Farm Classes in May 2018,

Several new At Home with Heidi Classes  are on the way so keep checking back for y updates!

Interested? Simply email me to make your reservations – links are at the end of each class descriptive. Your advance payment confirms your spot in class. Each class is a hands-on experience ( as much or as little as you would like) and each includes featured wine pairings from my friend Josh Villapando and his team at Assorted Table Wine Shop.

Shelley Eagan of Proffitt Cattle Company and I decided to have some fun with this springtime On the Farm beef-centric class and give it some South of the Border flair! 

As always the class begins with a farm tour where we will meet the finishing herd that grazes the grasses surrounding the Proffitt homestead and learn all about what it takes to be an organic rancher – the process and attention to detail is amazing! You’ll meet the horses and the dogs and cats and the chickens and then we’ll head back to the house to cook with Proffitt’s delicious grass fed and finished beef. We’ll start with a beefy Mexican appetizer and a bubbly toast upon arrival and then prepare 4 additional beef-centric courses that will make you flip your sombrero and shout out, Ole!

sammy-and-melinda.jpgSaturday May 26, 1-5 pm … Picnic On the Farm at New Town Farms in Waxhaw, NC 

The very first On the Farm class I ever taught was with Sammy and Melinda Koenigsberg at New Town Farm. We did it as sort of a lark and had no idea of the far reach it would turn out to have. I always look forward to heading back to New Town and to the Koenigsberg’s kitchen for what has become our annual springtime On the Farm Cooking Class. First Sammy will take us on a farm tour, sharing his philosophy and his love for what he does so well. Then we’ll cook together to prepare a 4 course alfresco meal –  perfectly portable fare for your Memorial Day picnic using all the local New Town has to offer.  Don’t Miss It – this class only comes around once a year!

Sunday, June 10, 1-5 pm … Cooking with Fresh Organic Herbs On the Farm at Windcrest Farms in Monroe, NC

Lots of  local on our plates in this class in the guise of great greens, herbs. lettuces, radishes, garlic and more planted and  growing in the certified organic greenhouses and grounds at Windcrest Farm in Monroe, NC  and we’re planning an “On The Farm” class to celebrate the June harvest.
This fun and informative class will kick off with a 45 minute or so farm tour  as we explore the  lay of the land with farmer Mary Roberts and her hubby Ray; then we’ll head into one of the greenhouses or, if weather allows, under a tent at the garden shed to set up a makeshift kitchen to cook with all of Windcrest’s fine local certified organic produce. We’ll have an appetizer and aperitif to start as we head out on our tour and then come back to create 4 fabulous courses of all local fare… In addition Mary will have plants and produce available for sale so that you can head back home and grow your own!
