Cooking Classes with Heidi Billotto: Sept-Nov 2018

Let’s plan to have some fun and get cooking. We are excited to share this list of all new Cooking Classes for September, October and November 2018.

Because relief will be needed for some time, I am committing to donate 10% of the profits from classes this quarter to NC Hurricane Relief efforts – particularly those that help farmers and feed those who have lost so much.

Here’s How a Cooking Class with Heidi works…

As always, each of Heidi Billotto’s Cooking Classes feature local and organic ingredients. Although Heidi does teach private classes for children, the experiences listed here are for adults, 18+. These classes as hands-on as you’d like it to be. If you have particular dietary needs, just let us know when you book your reservations and we will confirm that we can accommodate – we will certainly do our best.  And because, where there is food there should be wine, we work with local wine shops and local vineyards to include a wine pairing with each course. Class participants can enjoy tasting pours, and we’ll include wine notes for each dish in the recipe packet.

New This Season:  Heidi’s Kitchen Shortcut Series Cooking Classes

This new “Shortcut Series” of classes take place in an abbreviated time period at abbreviated pricing; featuring three easy culinary short cuts as the focus of each session. We’ll share one tasting pour of something fun to drink this season in place of our regular wine pairings. Appetizer sized portions to sample and you’ll still go home with recipes, tons of new ideas, and some fun swag.

Heidi’s “At Home with Heidi” Cooking Classes take place in her South Charlotte kitchen; while each of the “On The Farm” classes takes place at a local North or South Carolina Farm.

Once you make your reservations, Heidi will email you back to confirm your method of payment and will send you directions and all the need-to-know details of your particular class.

Did we mention there are always Cooking Class take-aways and goodie bags?

Each class participant will receive a printed set of recipes, plus a bag of goodies, samples and swag to take home and enjoy! September 2018 Cooking Classes – At Home with Heidi

Sat Sept 29  2-5 pm  – At Home with Heidi  – Let’s Get Sauced

Even with great local proteins, it’s a wonderfully crafted sauce that really makes the meal. In this hands-on class we’ll cover all there is to know in terms of basic technique for making the five “mother sauces” as  outlined in French culinary technique, but I’ll help to make it simply as can be… Once the sauces are stirred and seasoned, we’ll use each one to compose a finished dish you are going to love. Vegetarian and Gluten-Free options available.

October 2018 Cooking Classes – On The Farm

Sat Oct 6, 3-6 pm – On the Farm at Windcrest Farms | Monroe NC – Cooking with Local Ginger

Windcrest Farms is a certified organic farm of  certified organic greenhouses and farmers Ray and Mary Tarlton Roberts are our hosts. September and October mean its ginger season at Windcrest and this On The Farm class – with 4-5 courses of Local Certified Organic Ginger – is the kick off event for Windcrest’s Sunday Gingerfest a festival of this delicious seasonal harvest with lots of local vendors taking part.

The late afternoon Saturday class starts with a short farm tour; followed by meal prep, cooking and dining al fresco, if weather permits. If not, we’ve got a plan B out of the way of the weather! Mary sells at the Matthews Community Farmers’ Market or if you want to place an order for some of the fresh baby ginger to take home after class on Oct 6 – Mary is accepting preorders on her website now!!

Saturday October 27, 3-6 pm; On The Farm at Tega Hills Farm – Turn Up The Heat – Cooking with Local Chilies and Peppers

Spice your weekend up a bit with this flavor packed on the farm cooking class. Tega Hills Farm grows  chilies and peppers of all shapes, sizes and varying degrees of heat. You can buy peppers, lettuce, microgreens, tomatoes and more directly from Mark and Mindy Robinson at the Matthews Community Farmers’ Market & The Charlotte Regional Farmers’ Market on Saturdays and at the brand new store right at the farm during the week!   Come to the farm for this class  to learn first hand all there is to know about local peppers & chilies. We’ll start, as always with a farm tour of the green houses, then we’ll cook and eat (!) and you can  help harvest-your-own (if you’ve a mind to buy) after we learn how to pickle and preserve, make our own hot sauce, and  stuff, saute and simmer the harvest into 4-5 courses. Vegetarian and Gluten Free options available.

October 2018 Cooking Classes – At Home with Heidi

Tuesday Oct 2 – 6:30-8pm – At Home with Heidi – Shortcut Series: Cheese and Charcuterie

Local cheeses and charcuterie provide a fabulous head start for a quick and easy round of hors d’oeuvres. Learn how using a real pastry bag ( or a makeshift one) will change your life with tasty alternatives to crackers and crostini; plus, we’ll share great tips on how to create individualized  chocolate tasting plates for a super simple sweet finish to your next “fancy” dinner.

Monday October 29, 6:30-8pm – At Home with Heidi – Shortcut Series: Veggie Burgers and then some

Three delicious high protein do-ahead plant-based options –  all based on Heidi’s fabulous master recipe – to enjoy on a bun with all the trimmings, or on a seasonal salad with a great homemade dressing, or as a tasty appetizer option to start an evening with friends.

November 2018 Cooking Classes – On the Farm

Saturday Nov 3, 4-8pm –  Beef it Up Dinner On the Farm at Proffitt Family Cattle Co in Kings Mountain, NC

This class centers around the certified organic grass fed and finished beef that is raised at Proffitt Family Cattle Company. My friends, ranchers Shelley and Brian Eagan and Shelley’s folks Diane and Steve Proffitt are our hosts. We’ll all team together to prep and cook  4 or 5 beefy dishes and then enjoy every delicious bite in a good tapas-sized portion of each dish. The farm tour that kicks the evening off includes a visit with the horses and the cows; talk about the pastures, how organic beef is raised differently than conventional, and what it means to be 100% grass fed.  Shelley sells on Saturdays at the Charlotte Regional Farmers’ Market but here you’ll enjoy the opportunity to buy beef at the farm store to take home after class. Gluten-free options.

Saturday Nov 17, 2-6 pm – Fall Harvest Dinner from the Fields | On the Farm at New Town Farms in Waxhaw, NC

We’ll be talking and cooking local pasture raised turkey and chicken, eggs and all sorts of seasonal vegetables in this November On the Farm class with my friends, farmers Sammy and Melinda Koenigsberg. New Town Farms is another small family run farm focusing on the art and craft of growing vegetables in their five acre garden, raising pastured poultry, pastured laying hens, and Heritage breed, free range hogs. Join us for a fabulous farm tour and 4-5 course cooking class with wine pairings, that will set in the classic flavors of the season and help you get ready for your own Thanksgiving family feast!

November 2018 Cooking Classes – At Home with Heidi

Wednesday, November 14, 6:30-9pm -At Home with Heidi –  Gotta Love Grilled Cheese

Time for a class full of the real taste of local dairy.  Melted and grilled cheese, in all its guises, is one of the best comfort foods you’ll find around. This creamy and delicious crowd pleaser, works well for breakfast and lunch, later in the day as an appetizer or snack, at dinner as an entree or a sauce and even after the meal as a fun and flavorful dessert! Can’t wait for you to see all we have in store. Vegetarian and gluten free options.
