Wow what a month it has been. I have a had a blast cooking with all of you at catering jobs and private cooking classes nearly every weekend since the middle of December 2017. Now, its time to kick off my 2018 Cooking Class schedule with a couple of great On the Farm Classes and a few much requested At Home with Heidi Classes as well.

Each class is a hands-on experience ( as much or as little as you would like) and each includes featured wine pairings from my friend Josh Villapando and his team at Assorted Table Wine Shop.
I can promise you, you’re going to have a blast! My cooking classes have always been a delightful way meet new food-centric folk and are a fun date night or evening out with friends experience. Sat, Feb 17, 2-5 pm – Fresh from the Farmers’ Market Cooking ClassAt Home with Heidi BillottoThis class takes place in my South Charlotte home kitchen. I spend nearly every Saturday morning shopping for my week at at least 2 local farmers’ markets. Farming is not just a spring and summertime occupation and so you can easily buy everything you need – products, produce and proteins too all through the year from our area’s local farmers. I’ll shop early this Saturday morning and then come back and share what I bought as we prepare 4 fabulous courses of truly farm to table fare. Tues, Feb 20, 6:30-9:30 pm – Gluten Free Gourmet Cooking ClassAt Home with HeidiThis much requested class takes place in my South Charlotte home kitchen and provides a menu for a fabulous 4-course meal that is totally gluten free. We’ll make a milk bread and a chocolate bread pudding for dessert that will become your gluten free go-tos and inbetween a soup, salad and entree. Each course includes a wine pairing and tons of fun! As always I cook with as much local product as I can get and when I can’t get something local, I opt for the organic alternative. Glad to accommodate any dietary restrictions – just let me know in advance, and we can make it work!
Our hosts Shelley Eagan will take us on a farm tour where we will meet the finishing herd that grazes the grasses surrounding the Proffitt homestead and learn all about what it takes to be an organic rancher – the process and attention to detail is amazing! You’ll meet the horses and the dogs and cats and the chickens and then we’ll head back to the house to cook with Proffitt’s delicious grass fed and finished beef. We’ll start with a beefy appetizer and a bubbly toast upon arrival and then prepare 4 additional beef-centric courses with recipes you could easily serve at your Superbowl soiree the next day.
We’ll start with a little bite to eat and a beverage with which to toast and then move into the greenhouses to tour this incredible hydroponic farm of lettuces, microgreens and more. Then, I’ll have a kitchen set up in one of the greenhouses – or outside under the tents if weather allows and we’ll prepare 4 wonderful courses features the greens and veggies that Mark and Mindy so lovingly grow and I’ll supplement the produce with a variety of proteins from other local farms. And yes there will be a fun birthday cake recipe that you will want to make again and again. Join us for the celebration!
