Combine all of the pimento cheese ingredients and blend well by hand ( for chunky results) or in a blender or food processor until smooth for smooth and creamy results
Wear rubber gloves and slice jalapenos in half lengthwise, scraping out all of the seeds and ribs.
Place peppers open side up on a parchment paper lined baking sheet.
Combine the three cheeses. Stuff jalapenos with the cheese mix. Top with a sprinkling of bread crumbs. Bake in a350 oven for 30-40 minutes
For the best results, don't buy pre-shredded cheeses. Buy blocks of cheese and shred or grate your own. The food processor fitted with a shredding blade or even the steel knife, makes this task a quick and easy one.
